Cottage cheese..improves the flavour of life. There are
so many different types, styles, and variations of cheese to choose from, it’s
tough to decide where to begin. I suggest you to start where I’ve started. Your
first cheese might not look just like in picture from Google, but it will
always taste delicious and fresh. Add any ingredients to the main ones and you
will get the taste of what you want. This time we will make the cheese with
cumin (caraway). Also give you the
nutritional facts, if you will make it with Greek yogurt (will leave it down
below).
INGREDIENTS
2l whole milk
300g Greek yogurt (or soured cream)
3 eggs
1tsp (about 5g) Himalayan salt
1tbsp (about 15g) cumin
Heat the milk on low heat to boil in a large pot. Stir it
all the time using slow, steady up-and-down motions till boil. When the milk
comes to a boil, remove the pot from the heat. In another bowl mix yogurt (or
soured cream), eggs, salt and cumin until smooth consistency. Then add the
mixture to milk and return pot on the heat. Let the curds settle on the bottom
of the pot and boil it for 3-4 minutes, then remove from the heat (don’t forget
to stir all the time). Replace all the mixture to cheesecloth (or you can use
thin cotton pillow case). Let it to trickle down for about 10 minutes, tie up
the cheesecloth (or pillow case) and place it under the press (it could be
large pot with water or anything is heavy). And leave it for at least 4-6
hours.
